~ Stuffing is my favorite thanksgiving dish but I am vegetarian so it is hard to find vegetarian stuffing at thanksgiving. Thankfully my uncle is also vegetarian and a good cook so he shared this recipe with me. he said I had really good luck with my stuffing this year at my thanksgiving party so I just wanted to share the recipe with you so you could try it out. Some tips and tricks are pressing the garlic with a garlic press and adding the leeks to the onions after the onions start sauteing. This recipe serves 20-30 so it is for a bigger thanksgiving and the prep time is 15 minutes and 1 hour in the oven.

vegetarian stuffing
ingredient: Amount:
Peppridge farm stuffing Two 14 oz bags
Celery Hearts 16 oz
yellow onions 2 big ones
un-chopped fresh peeled garlic 32 oz
butter 3/4 lb
leeks one big package
vegetable broth 32 oz box
  1. Empty stuffing into a big kettle.
  2. Dice onions.
  3. in 1/4 lb butter, saute the onions until clear.
  4. add the ontions to the stuffing.
  5. Dice celery.
  6. in 1/4 lb butter, saute the celery until tender.
  7. add the celery to the stuffing.
  8. mince the garlic in a food processor.
  9. cut leeks into 1/4" rings.
  10. in 1/4 lb butter, saute the leeks and garlic lightly.
  11. add leeks and garlic to stuffing.
  12. boil the broth then add it to the stuffing and stir.
  13. Transfer to casserole dishes and bake at 350 for about a hour.
